Всем здрасте!

После многолетних попыток сделать нормальный сыр, я его сделал. Знакомьтесь, Качокавалло из Калуги.



Молодой имеет сладковато-сливочный вкус, с кислинкой. Структура Качаковалло после 4-х дней выдержки-волокнистая. Вкус молочно-кисловатый, а запах!!!



При разламывании головки сыра, гладкая основа, превращается в волокна. Это главный показатель настоящего Качокавалло!



Для этого стоило переехать в Калугу:) Волокнистость сыра появляется через пол недели после изготовления, просол по всей массе-тоже.



Послевкусие... Если кто то пробовал настоящее вологодское масло? Но только круче, т.к сыр обладает и кислинкой, и тонкими молочными нотками. Короче, я его сделал и нашел отличное молоко!
